A small amoun of SELVIS:
- Enables the all together mixing of sponge cake ingredients.
- Enables the whipping of them in an extremely short time (3 min. with the slowest planetary equipment, through its high capacity to improve inglobing of air).
- Improves a stable behaviour of the dough for at least two hours.
- Enables a progressive raising during baking.
- Improves a longer shelf-life through its antistaling effect.

SELVIS E - standard for universal application.
SELVIS N - high whipping activity, improved antistailing effect and water activity control.
SELVIS D - stronger standard for universal application.
SELVIS ROLL - special for roll cakes.
